Potatoes and Cheese for Obentos

Chop into 1 cm cubes:

1 large potato

Put the chopped potato in a small pot, and just barely cover it with water.  Put on a lid and bring to a boil.  Cook it for about 4-5 minutes, or until you can poke the potato with a fork and it feels soft.

While the potato is cooking, prepare

2 T of finely minced onions

Put the onions in a storage container that is big enough to fit the potato with a little room to spare.

Drain the potato when it's done, and add it to the container.  Put on the lid and shake it around to mix the onions with the potato and cook them a bit from the heat of the potato.

Add:

1 T corn (frozen corn works nicely)
1 T chopped ham
Salt and pepper

Shake the container to mix the ingredients.  In the morning, put a small serving of potato mixture on a small dish, add a little pizza cheese, and microwave for about 20 seconds to melt the cheese, then transfer to a foil cup for obentos and grill until the top is golden brown.
