Easy Carbonara


This recipe makes enough for 3-4 people.

1 package spaghetti noodles (500 gm)
3 eggs mixed with 2 T milk
(Fresh basil leaves for topping) 
½ C grated cheese (pizza cheese is fine)
Salt/pepper
Olive oil

Cook in large frying pan:

1 T olive oil
1 small pack chopped bacon (about 100 gm)
2 cloves garlic, finely minced (Add the garlic towards the end, as it burns easily.)

(You can cook the bacon while the noodles are cooking.)

Bring about 2 liters of water to boil in a pot. Add ½ t salt. Then add the noodles, and cook according to the package instructions, taking them off when they are ever-so-slightly still hard. (Called "al dente.") Drain, and rinse quickly.

Add the well-drained noodles to the hot frying pan with the bacon and garlic. Stir around a bit, and when the noodles are hot and mixed in, add the eggs, toss to coat, add the cheese, freshly ground pepper, and salt (if necessary). Continue to mix and toss, making sure all the noodles are coated and the cheese is melted and mixed in. Then they're done.

Serve immediately. Top with chopped fresh basil.
